Ouch. Arkansas by far has the most expensive food. It was so expensive we actually started filling our cart at one store then decided to take it to customer service so they could put it all away so we could leave and go to another store. The next store was equally expensive! We ended up spending a total of $148.20 for 6 days of meals. 68 meals came to a total of $2.18. At $15 per person eating out, this is a total estimated savings (over fast food) of $871.80. After grocery shopping twice, still having to make all our meals and clean up after each one, I almost wish we just ate out instead! But this is a marathon, not a sprint, so we have to save money where we can...
This week is pretty special because we're staying in Springdale, Arkansas which is the home of my Aunt Brandy. Between our competing work and school schedules, we are fitting in as much time as we possibly can before we head out this weekend because who knows the next time we'll be in Arkansas! Visiting family is a very special treat, so some of our meals are a little different in the hopes we will be able to feed some of the grandkids and get everyone together for a dinner while we're here.
We're going to be a little more loose with our planning this week since we'll be with family, but here are the basic meals we have planned:
6 Breakfasts
Cereal 3 days
Different flavors of pancakes 3 days + bacon or sausage + eggs
5 Lunches
Lunchmeat sandwiches and chips
Mac & cheese
Bean burritos
Fried egg sandwiches and chips
Peanut butter sandwiches and chips
6 Dinners
Chicken alfredo with spaghetti squash
Pot roast with potatoes and carrots
Corned beef and cabbage
Beef stew
Veggie burgers
Ramen with veggies
On our way into Arkansas we were (not) enjoying the sub zero temperatures. It is pretty shocking to be sitting outside in the sun on my Tuesday lunch typing this at a balmy 73 degrees. I'm definitely not complaining! I haven't been anywhere yet that is too warm for me. I am a sun seeker for sure. I'm still recovering from a knee injury and the warmer temperatures allow me to wear shorts and it's sooooo much more comfortable to wear a knee brace in shorts!
We're heading to Memphis, Tennessee next and it looks like it'll be about 50 degrees and rainy most of the time we're there. Which is really okay because the majority of the activities we'll be doing in Tennessee are indoor. But it definitely makes this little slice of sunshine that much more sweet. So you'll have to forgive us as we hide away in this cute little lakeside house over this next week while we recover from the car repair stress, crazy historic snowstorm, and exhaustion from traveling.
